Candidate selection happens in two phases: national selections and international selections.
National Selections allow for a country’s best representatives to be identified so a national team can be formed, made up of 3 bakers, each specialising in a category: Bread, Viennese Pastry, Artistic Piece.
International Selections pit teams from different geographic zones against each other. The 9 winning teams have the privilege of taking part on the 2012 Coupe du Monde de la Boulangerie (Bakery World Cup) alongside the 3 countries already selected for the 2012 Coupe du Boulangerie.
Candidates for the 2009-2011 Louis Lesaffre Cup are aged between 18 and 55, and are working bakers.
