March 2010 - pastries with stunning flavours

Coming from 5 generations of bakers, father to son, Thomas is an enthusiast, always on the lookout for new ideas. Currently in charge of around twenty bakeries for the family firm, and responsible for product creation, he was really in his element, astonishing us with pastries with stunning flavours.

 

 

 

 

"During my training, I often came up against problems, which meant that by the end I was ready for anything unexpected that might occur during the competition. That helped me to control my stress: I was confident, although I saw straight away that the level of competition was very high", confided Thomas.

While his artistically revisited version of the kouign-amann literally won over the public during the tasting session, he says that he was proudest of his lychee pastry…!

Thomas, his eyes brimming with emotion when the results were announced, gave special thanks to his family and his friends who have supported him for years in everything he has undertaken and reasserted his desire to pass on his experience in the profession.
